La Cocina Mexicana


Buenos días!  Good morning!

This spicy fiesta set by Dust Bunny is so close to home that I could probably talk at length about each piece.  The way we make and eat it, but I’m not going to bore you though!  I’ll just share that while familiar with each dish — the ones that are more of a staple with my family are the tortillas and tacos. Freshly made warm flour tortillas are the best and with morning food even better.  Highly recommend them filled with cooked egg (hard scrambled), or potato with egg or egg and chorizo.  You get the idea?  I like a warm tortilla just smeared with butter.  Not a morning person, then try chicken, beef or fish tacos with either flour or corn tortillas.  Personally, a piece of fajita fills me up good.

The grilled corn and the empanadas are typically eaten at special occasions or large family gatherings. The grilled corn smothered with mayonnaise, lime juice, chili powder and then crumbled cotija cheese is something you ought to try once! It’s delicious!  The rest is more your snack or party type finger foods with the exception of just the guacamole, which we eat alongside other foods.

  1. That food both looks and sounds yummy, Alexa! I love the spicing of those regional dishes which seem to suit my stomach so much better than Indian fare. Maybe I had a previous life in Mexico, who knows 🙂
